Quejos buns, made from manioc (a gluten-free root), are adapted from a traditional Brazilian recipe. They are quite tasty when they're fresh; if you buy them frozen, you'll need to toast them, but be careful not to leave them long or they become very hard. The sandwiches at the store are good, and they carry a modest assortment of other gluten-free foods as well, including other manioc-based baked goods. Their pizza dough is very thin, and good for individual pizzas (8"). (Rebellious Tomato sells a gluten-free pizza using quejos dough).
